GFCF Cheeseburger Pie

Here is a good-ole' southern casserole dish! Serve it with fruit and veggies or a salad. Yummy Yummy!

1 lb. of Ground Beef or Ground Turkey

1 small onion chopped

1/2 cup GFCF Biscuit/Baking Mix (Bob's Red Mill, Arrowhead Mills, or 365 Brand)

2 eggs

1 cup plain rice or soy milk

GFCF Cheese (Tofutti slices, grated vegan cheese)

GFCF mustard

Preheat oven to 400 degrees. Brown meat and onions and drain. Spread meat in a greased 8x8 square pan or pie pan. Top meat with GFCF cheese substitute and a little mustard. Whisk eggs, rice milk, and baking mix together. Pour batter over cheese. Bake in 400 degree oven until edges are golden and you can tell the batter is cooked. (don't ask me how long... LOL! I just cook it until it is done... 20 minutes or so???)


GFCF Cake Balls

Autism Mommy Tara and I LOVE our sweets!!! We are addicted to cake balls and cupcakes! We don't like to eat stuff that isn't GFCF in front of our kids, so when Tara had her b-day this month, she asked for GFCF Cake Balls! 

1 GFCF Cake Mix (prepared according directions on box)

1/2 - 3/4 can of prepared frosting (Pillsbury WHITE frosting is GFCF)

Enjoy Life Allergen Free Chocolate Chips

Bake cake as directed on box and allow to cool. Crumble cake into large mixing bowl and use hand mixer to make the cake into fine crumbs. Add in frosting and blend until all frosting "disappears" into the cake crumbs. Refrigerate mixture until cool enough to work with. Roll into bite-size balls. Melt choco-chips in double boiler or microwave. Dip balls into chocolate and set on wax paper to cool. While chocolate is still wet, sprinkle with decorations if desired. ENJOY!
